  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1 cup cream cheese, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed.
  5. In a small bowl, mix brown sugar and cinnamon for the filling.
  6. Fill each muffin cup halfway with batter, sprinkle with the cinnamon-sugar mixture, and top with remaining batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. While muffins are cooling, prepare icing by mixing softened cream cheese, powdered sugar, and milk until smooth.
  9. Drizzle icing over the cooled muffins before serving.

Notes

  • For extra flavor, consider adding vanilla extract to the cream cheese icing.
  • These muffins can be served warm or at room temperature.
