  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 cup brown sugar, packed
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix the flour, baking powder, salt, granulated sugar, and cinnamon.
  3. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon half of the batter into the muffin cups.
  6. Sprinkle brown sugar and a bit of cinnamon on top of the batter in each muffin cup.
  7. Top with the remaining batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool for a few minutes before transferring to a wire rack.
