Chickpea Pancakes

  • 1 1/4 cups water
  • 1 teaspoon salt
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a mixing bowl, combine chickpea flour, water, salt, turmeric, and cumin until smooth.
  2. Stir in olive oil and chopped parsley.
  3. Heat a non-stick skillet over medium heat and add a little oil.
  4. Pour in a ladleful of the batter and cook for 2-3 minutes until bubbles form.
  5. Flip the pancake and cook for another 2-3 minutes until golden brown.
  6. Repeat with the remaining batter.
  7. Serve warm with your favorite sauce or chutney.
