  • 4 boneless chicken breasts
  • 1 cup Madeira wine
  • 2 cups chicken broth
  • 1 cup sliced mushrooms
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then add to the skillet.
  3. Cook until golden on both sides, about 5-7 minutes per side.
  4. Remove chicken and set aside.
  5. In the same skillet, add mushrooms and cook until softened.
  6. Pour in Madeira wine and scrape up any bits from the bottom.
  7. Add chicken broth and bring to a simmer.
  8. Stir in the heavy cream and return the chicken to the pan.
  9. Simmer until chicken is cooked through.
  10. Garnish with fresh parsley before serving.

  • For extra depth of flavor, allow the sauce to reduce a bit longer.
