- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tablespoon lemon zest
- 3 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1 cup powdered sugar for rolling
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, cream the butter and sugar until light and fluffy.
- Add the egg, lemon zest, lemon juice, and vanilla extract. Mix well.

- Roll the dough into balls, then roll each ball in powdered sugar.
