- 1 cup shredded cheese
- 1 can black beans, rinsed and drained
- 1 cup salsa
- 4 corn tortillas, cut into strips
- 1/2 cup chopped cilantro
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt to taste
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, whisk the eggs and add salt, cumin, and chili powder.
- Layer the corn tortillas at the bottom of a baking dish.
- Spread the black beans over the tortillas.
- Pour the egg mixture over the beans and tortillas.
- Top with salsa and shredded cheese.
- Bake for 25-30 minutes or until the eggs are set.
