A delicious and easy Cheesy Baked Huevos Rancheros Casserole perfect for busy mornings.

Ingredients

  • 6 eggs
  • 1 cup shredded cheese
  • 1 can black beans, rinsed and drained
  • 1 cup salsa
  • 4 corn tortillas, cut into strips
  • 1/2 cup chopped cilantro
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, whisk the eggs and add salt, cumin, and chili powder.
  3. Layer the corn tortillas at the bottom of a baking dish.
  4. Spread the black beans over the tortillas.
  5. Pour the egg mixture over the beans and tortillas.
  6. Top with salsa and shredded cheese.
  7. Bake for 25-30 minutes or until the eggs are set.
  8. Garnish with chopped cilantro before serving.

Notes

  • This casserole can be made ahead of time and stored in the refrigerator.
  • For extra spice, add jalapeños to the mixture.
