- 1 pound chicken breast, diced
- 8 ounces cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 2 tablespoons Cajun seasoning
- 1 cup diced tomatoes
- 2 cups spinach, chopped
- 1 tablespoon olive oil
