  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons Cajun seasoning
  • 1 cup diced tomatoes
  • 2 cups spinach, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the penne pasta according to package instructions until al dente, then drain.
  3. In a large skillet, heat olive oil over medium heat and add the diced chicken. Cook until browned and cooked through.
  4. In a large bowl, mix cream cheese, sour cream, Cajun seasoning, salt, and pepper until well combined.
  5. Add the cooked pasta, chicken, diced tomatoes, and spinach to the cream cheese mixture. Stir until fully combined.
  6. Transfer the mixture to a greased baking dish and top with shredded cheddar cheese.
