Breakfast Tostadas

Ingredients

  • 4 tostada shells
  • 4 large eggs
  • 1 cup black beans, rinsed and drained
  • 1/2 cup diced tomatoes
  • 1/2 avocado, sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat the tostada shells in the oven according to package instructions.
  2. While the shells are baking, scramble the eggs in a non-stick skillet over medium heat.
  3. Once the eggs are cooked, remove from heat and set aside.
  4. Assemble the tostadas by layering black beans on the shell, followed by scrambled eggs, diced tomatoes, avocado, and feta cheese.
  5. Garnish with fresh cilantro before serving.
