Delicious breakfast enchiladas filled with turkey bacon and chicken ham, perfect for a hearty morning meal.

Ingredients

  • 4 large eggs
  • 1 cup shredded turkey bacon
  • 1 cup diced chicken ham
  • 1 cup shredded cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 8 flour tortillas
  • 1 cup salsa

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, scramble the eggs and add turkey bacon, chicken ham, and bell peppers.
  3. Stir in the cumin, paprika, and half of the cheese.
  4. Fill each tortilla with the egg mixture and roll up tightly.
  5. Place the rolled tortillas in a baking dish and cover with salsa.
  6. Sprinkle the remaining cheese on top.
  7. Bake for 20-25 minutes until the cheese is melted and bubbly.

Notes

  • For added flavor, try using pepper jack cheese.
  • These enchiladas can be served with sour cream or avocado on the side.
