  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chopped onions
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the short ribs with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat and sear the short ribs until browned on all sides.
  4. Add onions and garlic, cooking until softened.
  5. Pour in the beef broth and bring to a simmer.
  6. Stir in heavy cream, thyme, rosemary, and Dijon mustard.
  7. Cover and transfer the Dutch oven to the oven. Braise for 3 hours or until the meat is tender.
