Braised Beef and Green Bean Stew (Lebanese Lubee)

A rich and flavorful Lebanese stew with tender braised beef and fresh green beans.

Ingredients

  • 2 pounds beef, cut into chunks
  • 1 pound green beans, trimmed
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Add the beef chunks, browning on all sides.
  4. Stir in the tomato paste, cumin, coriander, salt, and pepper.
  5. Pour in the beef broth and bring to a simmer.
  6. Cover and cook for 1.5 to 2 hours until the beef is tender.
  7. Add the green beans and cook for an additional 20-30 minutes until the beans are tender.
  8. Adjust seasoning and serve hot.

Notes

  • Serve with rice or Lebanese bread for a complete meal.
  • You can add other vegetables like carrots or potatoes if desired.
