  • 2 large eggs

  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 jar (24 oz) Morello cherries
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 tablespoon chocolate shavings

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla to the dry ingredients and mix until well combined.
  4. Stir in boiling water until the batter is smooth.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. Once cooled, slice each cake in half horizontally to create four layers.
  9. Whip the heavy cream with powdered sugar until stiff peaks form.
  10. On a cake stand, layer one cake half, spreading a portion of whipped cream and some cherries, repeat until all layers are used.
  11. Frost the top and sides with the remaining whipped cream and sprinkle with chocolate shavings.
  12. Chill in the refrigerator for at least 2 hours before serving.
