- 4 medium sweet potatoes
- 2 cups shredded cooked chicken
- 1 cup barbecue sauce
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup shredded cheddar cheese
- 1 avocado, sliced
- 1/4 cup chopped green onions
- Preheat the oven to 400°F (200°C).
- Poke holes in the sweet potatoes with a fork and place them on a baking sheet. Bake for 45-60 minutes until tender.
- In a bowl, mix the shredded chicken with barbecue sauce.
- Once the sweet potatoes are baked, cut them open and fluff the insides with a fork.
- Stuff each sweet potato with the chicken mixture, black beans, corn, and cheese.
