Baked Butternut Squash Feta Pasta

  • 1 medium butternut squash
  • 8 ounces pasta (such as penne or fusilli)
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash in half, scoop out the seeds, and place cut-side down on a baking sheet.
  3. Roast for 30-40 minutes until tender.
  4. Bring a pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
  5. In a large bowl, scoop the roasted squash out of the skin and mash it.
  6. Add the feta cheese, garlic, olive oil, oregano, salt, and pepper to the bowl and mix well.
  7. Combine the pasta with the squash mixture until fully coated.
  8. Transfer to a baking dish and bake for 15-20 minutes until heated through.
  9. Garnish with fresh basil before serving.
