  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 3 8-ounce packages cream cheese, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups diced apples
  • 1 teaspoon cinnamon
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup flour

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs with melted butter and 1/4 cup of sugar. Press into the bottom of a springform pan.
  3. In another bowl, beat the cream cheese and remaining sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Spread the cream cheese mixture over the crust.
  5. In a separate bowl, mix the diced apples with cinnamon. Spoon over the cheesecake filling.
  6. In a bowl, combine oats, brown sugar, flour, and butter. Sprinkle over the apple layer.
  7. Bake for 50-60 minutes or until the center is set. Allow to cool before serving.
