2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1 cup sugar
3 8-ounce packages cream cheese, softened
3 large eggs
1 teaspoon vanilla extract
2 cups diced apples
1 teaspoon cinnamon
1/2 cup rolled oats
1/4 cup brown sugar
1/4 cup flour
Instructions
Preheat the oven to 325°F (163°C).
In a bowl, mix the graham cracker crumbs with melted butter and 1/4 cup of sugar. Press into the bottom of a springform pan.
In another bowl, beat the cream cheese and remaining sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Spread the cream cheese mixture over the crust.
In a separate bowl, mix the diced apples with cinnamon. Spoon over the cheesecake filling.
In a bowl, combine oats, brown sugar, flour, and butter. Sprinkle over the apple layer.
Bake for 50-60 minutes or until the center is set. Allow to cool before serving.

Serve chilled for best flavor.
