1 cup graham cracker crumbs
1/4 cup melted butter
2 cups cream cheese
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups apples, peeled and diced
1 teaspoon cinnamon
1 cup oats
1/2 cup brown sugar
1/4 cup flour
Instructions
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine graham cracker crumbs and melted butter, then press the mixture into the bottom of cupcake liners.
In another bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla, mixing until well combined.
In yet another bowl, toss diced apples with cinnamon.
Pour the cream cheese mixture over the crust, then add a layer of the cinnamon apples on top.
For the topping, mix oats, brown sugar, and flour in a bowl. Sprinkle it over the apple layer.
Bake for 20-25 minutes or until set. Let cool before serving.
Notes
