A delicious and quick recipe for Instant Pot Tortellini Soup featuring turkey bacon.

  • 1 tablespoon olive oil
  • 4 ounces turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound frozen cheese tortellini
  • 1 cup spinach, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode and add the olive oil.
  2. Add the chopped turkey bacon and cook until crispy.
  3. Add the onion and garlic, sautéing until softened.
  4. Pour in the chicken broth and stir well.
  5. Add the frozen tortellini, spinach, and Italian seasoning.
  6. Close the lid and set the Instant Pot to manual high pressure for 3 minutes.
  7. Once done, quick release the pressure and stir the soup.
  8. Season with salt and pepper to taste before serving.
